We are in the process of creating a company that will provide hand crafted ales and lagers to area bars and restaurants, in addition to our own taproom. The Clamp and Gasket plans on using local ingredients (even hops and spices from our own gardens), to enhance the local terrior, or local “flavor” of our products. In addition to incorporating local ingredients, we hope to work with local restaurants to create chef pairings and collaborations.  Future plans include offering weekend seminars that focus on learning various skills or trends in brewing to those who would love to learn more about the craft.

We intend to separate ourselves from the competition by utilizing a variety of brewing techniques to create bold flavors and exceptional beers. We will strive for excellent customer service and to help be a positive force within the community. We feel that the craft brewing community is truly a community of individuals passionate about their art, and we would like to help advance the movement and make the Chicago land area a premire destination for great local beer.

In addition, as the demand for craft beer increases, so does the desire for individuals to learn about the craft. In the future we intend on designing a series of seminars and classes for individuals to learn various aspects of the brewing process and trends taught by our head brewer, Bryan Shimkos.

We  plan on working with the Small Business Administration in addition to several grants we are considering to help guide the brewery towards being a sustainable, green brew house. We believe we should apply for all eligible federal and state grants in order to increase our capital.  Fortunately, our team has successful history with writing and receiving such assistance.

We have conducted a great deal of research and are well aware of the risks of opening a new business, but we firmly believe that this is a business opportunity that is bound to grow.  Please consider an investment in this venture and aiding in acquiring the much needed start-up capital.
