The Clamp & Gasket will be a commercial craft brewery with a taproom that will serve our hand crafted ales in addition to light distribution. Here are the nuts and bolts of the project, or in our terms, the clamp and gasket of things. We want to create amazing beers that really emphasize what craft beer is all about. Beyond beer with flavor and integrity, we want to create a culture of open communication between us and our customers, whether it is talking with them at various beer events, teaching classes in various aspects of craft brewing, or via our “virtual boardroom”. The Clamp and Gasket space will support that sense of community as well; providing opportunities to work with local farmers and schools to help us create a sustainable brewery, as well as an inviting meeting spot and a unique facility for public and private events.
Bryan Shimkos is an award-winning brewer and has worked in the craft brewing industry for 7 years, spending the majority of that time in Chicago. He has a Master’s Degree in Microbiology and completed the WBA International Diploma in Brewing Technology in 2005. Bryan has the vision of creating The Clamp and Gasket as an educational and brewery destination in southern Chicago, a city renowned for training phenomenal brewers and producing amazing beer. He has been working with the Ward and local business groups to identify the community needs and is the Brewmaster at The Clamp & Gasket. He is responsible for general project oversight and attracting and continual investment.
