Welcome

The Clamp and Gasket plans on being a craft brewery in the Chicagoland area, with a focus on creating amazing  beers that  really emphasizes what craft beer is all about. Beyond beer with flavor and integrity, we want to create a culture of open communication between us and our customers, whether it is talking with them at various beer events, collaborating with chefs to design beer and food pairings, teaching classes in various aspects of craft brewing, or via our “virtual boardroom”. The Clamp and Gasket space will support that sense of community as well; providing opportunities to work with local farmers and schools to help us create a sustainable brewery, as well as an inviting meeting spot and a unique facility for public and private events.

Our Philosophy

Sir Isaac Newton echoed this statement more than 500 years later, perhaps the most famous of the quote’s relater, and believed that one builds on the collective knowledge of everyone who worked before you to create something not possible before. At The Clamp and Gasket, we have built on our theoretical brewing knowledge with practices and procedures designed to put these theories into applications in the brewery.

We believe one doesn’t ever complete the learning process, but achieves specialization  through continuous learning and building finer and finer details into the overall skill set. Our goal is to instill these values and skills into each handcrafted batch so that all may enjoy our craft.

Green/Local

The Clamp and Gasket plans on using local ingredients (even hops and spices from our own gardens), to enhance the local Terrior, or local “flavor”, of our products. In addition to incorporating local ingredients, we hope to work with local restaurants in chef pairings and collaborations.

We also have been creating plans for “green initiatives” such as a green roof and garden areas in which we work with local schools for special educational projects. In addition, our spent grain will be sent to the local agriculture school to provide spent grain as a livestock feed and a high quality compost material.

Overall we would like to engage in economic, social and environmental practices that achieve a sustainable, yet profitable, business.

Beers

Three “regular” beers will be brewed and maintained at The Clamp and Gasket. We will be producing seasonal specialties that will be available in the taproom. Occasionally, for the really exceptional beers, we will be having small batch bottle releases for purchase at the brewery.  The Clamp and Gasket will also be concentrating on a barrel aging program, pairing beer styles with suitable barrels to a create hand crafted, hand blended artisan series.
